Matt Troost

In 1999 Chef Matt Troost began his culinary journey in Holland, Michigan after realizing that cooking was his true passion. He spent all of his time in kitchens; working at a bakery during the day and a bistro at night to ultimately realize his dream and become a chef. He moved on to Arizona where he attended Le Cordon Bleu at The Scottsdale Culinary Institute. After graduation, he moved to Aspen, CO where his career took shape at the prestigious Montagna at The Little Nell. There he learned the ways of farm to table cooking and artisan crafts such as curing meats and making cheese. After 4 years in Aspen, Chef Troost made the move to Chicago where he worked at the Peninsula Hotel and then his first executive chef position at Fianco. He has been the chef at Three Aces since they opened in 2010. Recently, he won the Golden Rasher at the 2012 Baconfest, and the Peoples Choice at the 2012 Chicago Gourmet Hamburger Hop.
